Make hummus with garbanzo beans, tahini and parsley

Hummus is gaining momentum as one of the world's most favorite dips, because it's delicious and healthy, and can be more than just a dip, adding it to tons of recipes. This quick and easy appetizer from the Mediterranean is perfect for a starter to any summer meal. Check out the recipe for this delicious and easy to make hummus.

Ingredients:

1/2 cup lemon juice
2 cups canned, cooked garbanzo beans, drained, reserve 3 tablespoons liquid
4 medium garlic cloves, peeled, quartered
4 tablespoons tahini
1-1/2 tablespoons olive oil
2 teaspoons salt
1/4 cup chopped parsley
2 teaspoons salt
1/4 cup chopped parsley

Instructions:

Place lemon juice, garbanzo beans, reserved liquid, garlic, tahini, olive oil and salt in a Cuisinart SmartPower 7 Speed Electronic blender jar in the order listed. Place cover on blender jar. Turn blender ON and process on Liquefy until smooth, about 20 seconds. Turn blender OFF. Scrape blender jar with a spatula. Turn blender ON and process an additional 40 - 60 seconds until smooth. Turn blender OFF. Transfer to a serving dish and sprinkle with parsley. Serve at room temperature.
